Fraser Island Prawn and Snapper Dumplings

Fraser Island Prawn and Snapper Dumplings by Capelli Foods

  • 500gm Snapper – Diced
  • 500gm Prawns – peeled, diced
  • 4 drops sesame oil
  • 30ml soy sauce (GF)
  • 40gm ginger – grated
  • 4 Cloves garlic – chopped
  • Bunch Coriander – chopped
  • 3 spring onions – sliced thinly
  • 1 small chili – optional
  • Zest of 2 limes

Method

Process all ingredient apart from the coriander in a food processor in batches
Mix with coriander in a large bowl
Make quenelles of the mixture and set in the fridge
Shallow fry in oil in small batches to give colour
Cool in fridge
Steam in bamboo basket just before eating.
Serve with Sweet chilli dipping sauce

Sweet Chilli Sauce

  • 100ml water
  • 100gm white sugar
  • 50ml Red wine vinegar
  • 1 Lemon grass stalk
  • 1 large chilli

Combine in a saucepan, simmer until reduced by a third
