So, I thought it was time to write about something else instead of my incredible health journey but I can’t go past food. I do love all food and now I love good food and I have always loved finding fabulous recipes. So this is one I have already posted on our Womens HQ facebook page but it is a recipe my friend Kay posted on her facebook page. Its from www.therecipecritic.com  and there are so many fantastic recipes on Alyssa’s site.

This one looked good, I had most of the ingredients, it looked easy, so I thought I’ll do that tomorrow. That was yesterday. My sons said it was the best meal I had ever cooked. Well, naturally I am mortified because I am been tied to the kitchen for the past 20 years creating masterpieces (tongue in cheek) and this is one of the easiest dishes I have made! Devastated.

So, I went back to the shop this morning, bought more chook breasts and cashews,  I had the rest of the ingredients, and made it again for tonight haha! That will fix them. It is tasty, fairly cheap (4 x chinese meals for this lot would cost $70 so its cheap);  and so I thought I can just chuck it in the crock pot at lunch time as its my day off and that’s my Friday duty!

As I may have mentioned,….. I’m on my health kick …..I know its all I talk about – so I just had a cup full in total which was a mix of this plus brown rice total and it was great. I should have had veges but to be honest I couldn’t be bothered. I even had some ready but it had been a huge day and that was all I could manage.
